    • 6 oz [170 g] half-cut spaghetti or linguine (I use Barilla’s ProntoTM Half-Cut Spaghetti)
    • 21/4 cups [560 ml] water
    • 1 cup [250 ml] very finely grated Pecorino Romano and Parmigiano Reggiano cheeses (use a half/half ratio, or only Pecorino Romano)
    • To serve
    • Grated Pecorino Romano and/or Parmigiano Reggiano cheeses
    • Coarsely ground black pepper
    • Garlicky Broiled Broccoli (optional, recipe below)
